RICE DRESSING 
2 bell peppers
1 stalk celery
1 yellow onion
1 bundle green onions
1/4 lb. chicken gizzards
1 lb. ground beef
2 c. rice
1 tsp. salt
1 tsp. pepper
1 lb. calf liver

Use food processor or food grinder to grind bell peppers, stalk of celery, yellow onion and green onions; set aside. Use food processor to grind together chicken gizzards and liver; set aside.

Brown in a 10" skillet ground beef. Add ground liver and gizzards. Cook until liver and gizzards are brown. Add onion and bell pepper mixture. Allow to simmer in skillet for 25 minutes. Cook rice in separate pot until done. Pour off water and rinse rice in a colander.

Return rice to original pot and add meat ingredients. Stir thoroughly. Season to taste.
