GARDEN FRESH TURKEY Dressing 
1/2 c. butter
1 c. chopped onions
2 c. sliced mushrooms
2 eggs, beaten
3/4 c. broth
1/2 tsp. salt
1/2 tsp. pepper
4 c. bread cubes or crumbs
1 c. chopped zucchini
1 c. shredded carrots
1/2 c. chopped parsley or green onions
Turkey giblets (chopped or shredded)

Boil turkey giblets, neck, etc. Cool and save broth to use for stuffing mix and the rest for gravy.

Melt butter in skillet and saute onion and mushrooms 10 minutes. In large bowl, combine eggs, broth, salt and pepper. Add in mushrooms and onion mixture, bread, zucchini, carrots, parsley, and giblets. Toss lightly. Use to stuff small turkey.

Makes about 5-6 cups.

Recipe may be doubled for larger turkey.
