SCOTTISH CHOCOLATE CAKE 
2 c. sugar
2 c. flour
4 tbsp. cocoa
1 tsp. baking soda
1 stick butter, melted
1/2 c. oil
1 c. water
1/2 c. buttermilk
2 eggs
1 tsp. vanilla

Combine sugar, flour, cocoa and baking soda. In separate pan, melt butter and add oil and 1 cup water; add to dry ingredients. Finally add buttermilk, eggs and vanilla. Spray 9 x 13 inch pan with cooking spray or grease and flour pan. Bake for 1 hour at 350 degrees.

CHOCOLATE ICING FOR SCOTTISH CHOCOLATE CAKE:

1 box powdered sugar
4 tbsp. cocoa
1 tsp. vanilla
1 stick butter, melted
4 to 5 tbsp. milk

Combine all ingredients. May need to add additional milk. Spread over hot cake.
