SHRIMP SCAMPI 
1 1/2 lb. lg. shrimp
1/2 c. olive oil
2 cloves garlic, minced
2 tbsp. chopped fresh parsley
1/2 tsp. dried oregano, crushed
1/2 tsp. salt
1/8 tsp. red pepper flakes
1 tbsp. lemon juice

Shell and devein shrimp, leaving tail intact. Arrange in single layer on bottom of broiler pan. Preheat broiler. In small saucepan, heat olive oil, garlic, parsley, oregano, salt and red pepper. Pour over shrimp, toss to coat. Broil 4 inches from source of heat for about 5 minutes. Sprinkle with lemon juice.

Serves 6.
