DIJON GLAZED CHICKEN 
4 chicken breast halves, skinned and boned
1/4 c. Dijon mustard
3 tbsp. brown sugar
2 tsp. minced crystalized ginger
2 tbsp. chopped fresh parsley

Place chicken in a greased 7x11x2 inch baking dish. Combine mustard, brown sugar, and ginger; stir well. Brush half of glaze mixture evenly over chicken. Cover and bake at 375 degrees for 15 to 20 minutes or until chicken is done.

Uncover and baste with remaining glaze mixture. Broil chicken 4 inches from heat 1 to 2 minutes or just until golden. Transfer chicken to a serving platter and sprinkle with parsley. Yield 4 servings.
