CORN FRITTERS 
2 eggs
1/2 c. milk
1 c. corn
1 c. flour, sifted
1 tsp. baking powder
1 tsp. salt
1 tsp. sugar
1 tsp. oil

Beat eggs; stir in milk. Add corn and beat in flour, baking powder, salt, sugar and oil. Drop by spoonfuls into hot oil (375°F). Turn to brown; drain. Serve hot with maple syrup or sprinkle with powdered sugar.
