FRUIT PIZZA | |
This is a delightful refreshment to serve guests. If time is a premium. I use 2 packages of refrigerated sugar cookie dough instead of making my own cookie dough for the crust. This is enough to cover 2 pizza pans. Arrange in pan and press together to cover the bottoms. Bake according to directions on container. CRUST: 1/2 c. shortening 1/2 c. white sugar 1/2 c. brown sugar 1 egg 1 tsp. vanilla 2 1/2 c. flour 1 tsp. baking powder 1 tsp. baking soda 1/4 tsp. salt 1/2 c. thick sour milk or buttermilk (Sweet milk may be used if preferred, but increase baking powder to 2 tsp.; be sure to include soda) Cream shortening, white sugar and brown sugar together. Artificial sweetener can be used in place of part of the sugar. Add egg and vanilla, beating until fluffy. Add sifted dry ingredients alternating with milk. Grease 2 large pizza pans and press dough into pans to form crusts. It helps to roll dough right in pan. If you only have one pan, cover pan with foil, grease and shape dough into pan. Then lift foil and crust into baking sheet to bake second crust. Bake in 350 degree oven for 8 to 10 minutes. Do not overbake. Cool thoroughly. Crusts freeze well, so while you are mixing and baking dough, make the extra crust to use later. CREAM CHEESE BASE: 1 (8 oz.) pkg. cream cheese, softened 1/3 c. sugar 2 tbsp. milk 1/2 tsp. vanilla Beat together until smooth and creamy. Spread over cooked crust. (Again, artificial sweetener can be used in place of part of the sugar. FRUIT TOPPING: Top with rings of sliced fruit as desired. I like to start in the center with a Maraschino cherry, then one whole pineapple slice, a ring of blueberries or grapes, then sliced bananas, pineapple chunks and complete with apple slices or sliced strawberries. Dip apple and banana slices in a mixture of half lemon juice and water and clean before adding to prevent darkening. Fresh peaches, strawberries or halved grapes and mandarin oranges or even kiwi can be used. OPTIONAL GLAZE: (Use this amount for each pizza.) Pizza is delicious and attractive served without glaze, but glaze may be added if desired. 3/4 c. apple juice or orange juice 2 tsp. sugar 2 tsp. clear jel or cornstarch 1/2 tsp. strawberry extract (optional) I use fruit juice leftover from pineapple and mandarin orange etc. Combine in saucepan. Cook until thickened, stirring constantly. Remove from heat. Cool slightly and brush over fruit. |
