RAW APPLE CAKE 
3/4 c. butter
1 1/2 c. sugar
2 beaten eggs
2 1/4 c. sifted flour
1 1/2 tsp. baking soda
1/2 tsp. salt
3/4 c. strong coffee
1 tsp. vanilla
3 c. peeled chopped apples

Topping:

1/2 c. brown sugar
1 tsp. cinnamon
1/2 c. chopped walnuts

Cream butter with sugar and eggs. Add sifted flour, soda, salt, coffee and vanilla. Fold in apples. Pour into a 9x13x2-inch pan.

Mix brown sugar, nuts and cinnamon, sprinkle over batter in pan.

Bake in a 350°F oven for 45-55 minutes or until tested done.
