1 lg. hog head 2 lbs. mixed variety meats (hearts, kidney, etc.) 3 med. onions 2 c. chopped green onion tops 20 sprigs fresh parsley 3 lbs. lean pork 2 lb. pork liver 2 gallons cooked rice Salt and pepper Boil hog head until tender; let cool. Remove meat from bones. Grind hog head meat, heart, kidney, onion and parsley in meat grinder. Combine all ingredients, adding salt and pepper, as desired. Mix well. Stuff meat mixture into sausage casing. Boil for 5 minutes or until meat is done. |
