HAM AND EGG SANDWICH 
2 c. cooked ham, diced
2 tbsp. butter
1/2 c. onion, chopped
3/4 c. green pepper, chopped
2 c. fresh tomatoes, chopped
1 c. grated cheddar cheese
8 eggs
3/4 c. milk
1/2 tsp. salt
1/4 tsp. pepper
1/3 c. grated Parmesan cheese
12 slices white bread
Mayonnaise

Preheat oven 350 degrees. Saute onion, green pepper, tomatoes and ham in butter. Add cheddar cheese, stirring until melted. Spread each slice of bread with mayonnaise.

Place 6 slices in greased pan, top each with ham mixture, then another slice of bread. Beat eggs with milk, salt and pepper and pour overall. Sprinkle with Parmesan cheese. Bake approximately 30 minutes or until lightly browned and custard is cooked. Serve hot.
