HARVARD BEETS 
6 med. beets, cooked and sliced
1/2 sm. onion, chopped
1/3 c. vinegar
1/4 c. sugar (brown or white)
1 tbsp. cornstarch
2 tbsp. butter
1/4 tsp. salt
2 tsp. parsley

Combine sugar, cornstarch, and salt. Put vinegar and butter in saucepan and add sugar mixture. Stir over low heat until thickened and bubbly. Fold in beets, onion, and parsley. Simmer for 5 minutes.
