MICROWAVE SCALLOPED POTATOES 
3 tbsp. butter
2 tbsp. flour
1 tsp. salt
1/4 tsp. pepper
2 c. milk
3 1/2 to 4 c. thinly sliced potatoes
2 tbsp. minced onion

Microwave butter until melted. Blend in flour, salt and pepper. Gradually stir in milk. Microwave 8 to 10 minutes, stirring every 4 minutes. Layer 1/2 of potatoes, onion and sauce in greased 2 quart casserole dish. Repeat layers. Cover and microwave 18 minutes. If desired, sprinkle with paprika or 1/2 c. shredded sharp cheese after cooking. Let stand 5 minutes before serving.

Since microwave ovens vary in power, you may need to adjust your cooking time.
