HAM AND CHEESE SQUASH 
1 lg. acorn squash
4 slices or 1/4 lb. cubed ham
1/3 lb. Colby, Swiss or cheddar cheese
1 med. tomato, diced
Saran Wrap

Cut acorn in half. Clean out seeds. Cover with Saran Wrap and microwave for 1 1/2 minutes on high. Uncover and add ham and cheese evenly. Re-cover and microwave on high for 2 minutes or until cheese is melted and squash is tender. Top with diced tomato and serve with spoons.

Since microwave ovens vary in power, you may need to adjust your cooking time.
