SQUASH & CHEESE DISH 
1 lb. squash (yellow)
2 c. water
1 sm. onion
1 c. grated cheese
1 tbsp. butter
1/2 c. bread crumbs
2 eggs, separated
1/2 tsp. salt
1/2 tsp. pepper

Slice squash, chop onion. Cook in water until tender. Drain. Add butter and wash thoroughly. Add cheese, milk, bread crumbs, egg yolks and salt and pepper. Fold in stiffly beaten egg whites. Pour in greased baking dish. Bake at 350 degrees until lightly browned. Serves 4 to 6.
