SMOTHERED CHICKEN 
1 fryer, disjointed
1 1/2 tsp. salt
1/4 tsp. black pepper
1/4 tsp. ginger
1/4 tsp. poultry seasoning
1-3 c. flour
1/2 c. fat
2 c. cream or evaporated milk

Combine flour and seasonings; dredge chicken with the mixture. Melt the fat in a heavy skillet and brown chicken on both sides. Transfer chicken to a casserole and sprinkle remaining flour and seasonings over top of chicken.

Heat cream or milk then pour over top of chicken. Cover and bake in a 350 degree oven for 1 hour. Add a little water to it, once in a while to keep it from getting too dry.
