SMOTHERED CHICKEN 
2 lb. chicken (cut into sm. pieces)
2 tbsp. soy sauce
1/2 c. dry wine
1/2 c. chopped parsley
2 c. chopped onion
1/2 c. chopped bell pepper
Salt to taste
Hot sauce to taste
2 tsp. garlic
2 tbsp. oil

Rinse chicken and pat dry, season with soy sauce, salt and hot sauce, set aside.

Saute onions, peppers and parsley until tender. Add wine and garlic, stirring well. Add chicken and mix well. Cover and simmer over low heat for 2 hours. Serve over cooked rice. Serves 4-6.
