SAUSAGE 'N' CHEESE SKILLET 
1 lb. Italian sausage (bulk or links), cut into bite size pieces
1 c. chopped onions
1/3 c. chopped green pepper
1 clove garlic, chopped
1 (16 oz.) can stewed tomatoes
1 c. tomato juice
1 (4 oz.) can button mushrooms, drained
2 tsp. beef flavored instant bouillon or 2 beef flavor bouillon cubes
1/2 tsp. Italian seasoning
1 c. grated Parmesan cheese, drained
Corn chips

In large skillet, brown sausage; drain. Add onion, green pepper, and garlic. Cook and stir until tender. Add tomatoes, juice, mushrooms, bouillon, and seasoning; mix well. Simmer, uncovered, 30 minutes. Stir in 1/2 cup cheese; heat through. Serve with chips and remaining cheese.

Note: Recipe can be doubled easily. This recipe seems to be a little salty. Also, this would be a good crock pot recipe. Serves 6.
