EASY PAN RHUBARB CAKE 
1 c. sugar
1/3 c. shortening
2 eggs
1/2 c. milk
1 1/3 c. flour
2 tsp. baking powder
1 tsp. salt
1 tsp. vanilla
3 c. rhubarb
1/2 c. brown sugar

Mix first 8 ingredients and pour into greased pan (9x13).

Top with the diced rhubarb. Sprinkle the brown sugar over top (may also sprinkle a bit of cinnamon). Bake 30 minutes at 350 degrees. (Rhubarb will sink into the batter.) Top with a glaze drizzled over it.

GLAZE:

1/2 c. powdered sugar
Some milk
