ZUCCHINI CASSEROLE 
2 c. water
4 c. diced zucchini (boil in water until soft, drain)

Butter bottom of casserole dish. Add cup of chopped onion, 1/2 cup chopped pepper (green) and 1/2 cup Parmesan cheese.

DRESSING:

2 eggs, beaten with
1 c. mayonnaise (whip)

Pour over top of casserole. Dot top with butter. Top with 2 tablespoons bread crumbs. Bake at 350 degrees for 30 minutes.
