HUSH PUPPIES 
1 3/4 c. white cornmeal
1 1/2 tsp. salt
1/2 tsp. baking soda
1 1/2 tsp. baking powder
1 egg, beaten
1 c. buttermilk
1/4 c. finely chopped onion
Vegetable oil
Optional: Jalapeno peppers
A dash of garlic

Combine dry ingredients. Add egg and buttermilk. Mix lightly. Stir in onion. Drop batter by tablespoonfuls into deep hot oil (370 degrees). Turn once. Cook until hush puppies are golden brown, 3 to 5 minutes. Drain well.
