1/2 c. shortening
2 eggs
1 tsp. vanilla
1/3 c. sugar substitute (8-10 pack)
1 c. chopped dates (add more dates if you like concentrated)
1 c. sugarless applesauce if you can find it
2 c. flour
1 tsp. baking soda
1/2 tsp. salt
1 c. chopped nuts

Cream shortening, eggs, applesauce, vanilla and sugar substitute. Add dates and nuts; blend well. Add flour, soda and salt. Mix well and bake in tube pan at 325 degrees for 45 minutes. If baking muffin pans reduce the heat slightly.
