CHOPPED CHICKEN LIVERS 
1 lb. fresh chicken livers
3-4 tbsp. rendered chicken fat
2 lg. onions, chopped
6 eggs, hard cooked
Salt and pepper to taste

Saute washed and dried livers in chicken fat until done, not dry. Remove livers. In same pan saute onions until yellow. Chop or process all ingredients together very fine. Moisten with additional chicken fat. Additional seasoning may be required. Refrigerate. Serve at room temperature with toasts or crackers.
