GREEK LEMON BARS 
4 eggs
13 packs Equal
1 tsp. vanilla
1/4 c. oil
4 tbsp. lemon juice
3/4 c. flour
2/3 c. chopped walnuts
1 tbsp. lemon peel

GLAZE: 1 package vanilla sugar free pudding made thin. Add 1/4 teaspoon lemon extract. Spread over bars and sprinkle peel on top.

Beat eggs and sweetener on high speed until lemon color. Beat in vanilla, oil, and 1/2 of lemon peel, lemon juice and flour. Stir in nuts. Pour into 7 x 11 inch pan sprayed with Pam. Bake at 375 degrees for 25 minutes. Do not over bake. Top with glaze.
