SONIA'S RICE PUDDING 
1 qt. milk
1/2 c. white rice
2 eggs
1/2 c. sugar
1 (13 oz.) can evaporated milk
1 tsp. vanilla
Cinnamon

Bring milk to a boil, then add rice. Cook until rice is done, about 20 minutes, stirring constantly. In a separate bowl, beat 2 eggs, sugar, and 3/4 cup evaporated milk. Add egg mixture and the remainder of the can of evaporated milk. Cook until thick, about 5 minutes. Add vanilla. Pour in a bowl and sprinkle with cinnamon. Enjoy.
