SWEET RICE 
3 tbsp. butter
3/4 c. raw rice
Dash of salt
1 1/2 c. water
1 qt. milk
4 eggs, beaten
1 c. sugar
1 tsp. vanilla

In a saucepan, combine butter, rice, salt and water. Place over heat, bring to a boil, then lower heat to simmer. Cook until water is absorbed. Add milk; cook covered until rice is cooked. Stir a little of hot rice mixture into beaten eggs, then pour into pan, stirring very well. Add sugar. Cook 5 minutes longer, remove from heat and add vanilla. Pour into serving dish and sprinkle with cinnamon. Serve warm or cold.
