TARRAGON VINEGAR 
2 c. white vinegar
3 sprigs fresh tarragon, 4-5 inches long

In small stainless steel saucepan, heat vinegar to boiling. Meanwhile, place tarragon sprigs in clean pint jar. Carefully pour hot vinegar into jar. Cover; let stand several days at room temperature to blend flavors. If desired, strain into decorative jars and add fresh tarragon. Store in cool, dark place. Makes 1 pint.
