CABBAGE SALAD WITH TARRAGON
VINEGAR
 
4 c. shredded cabbage
1/2 c. chopped green pepper
2 tbsp. sugar
1 tsp. salt
1 tsp. celery seed
Dash white pepper
2 tbsp. tarragon vinegar
1 tsp. prepared mustard
1/2 c. Miracle Whip

Combine vegetables, salt, sugar, celery seed and pepper. Combine vinegar, mustard and salad dressing into jar. Add to vegetables. Mix thoroughly. Chill. Serve.

The cabbage salad with tarragon vinegar was a very nice recipe except for the sugar which I did not add and the miracle whip which I did not use. Instead I used a couple of tablespoons of canola oil. The resulting salad is a vibrant tasty complement, to the barbecued chicken I served it with. The point is sugar serves only to sweeten and dull flavors. Try a favorite salad dressing and leave it out, see how much better and sharper the taste is.
