EASY LASAGNA (MICROWAVE) 
1/2 lb. ground beef
32 oz. jar spaghetti sauce
1/2 c. water
1 1/2 c. Ricotta or cottage cheese
1 egg
1/2 tsp. pepper
8 lasagna noodles (uncooked)
8 oz. pkg. Mozzarella slices
1/2 c. (2 oz.) grated Parmesan cheese

Crumble meat in 1 1/2 quart casserole. Cover and microwave until browned. Drain. Stir in spaghetti sauce and water; set aside. Combine Ricotta cheese, egg and pepper. Spoon 1/2 cup sauce into 13 1/2 x 8 3/4 inch baking dish. Alternately layer 1/2 of noodles, cheese/egg mixture, Mozzarella cheese and sauce. Repeat, ending with sauce. Cover with saran wrap. Microwave on medium to medium high for about 23 minutes or until noodles are slightly tender. Uncover, top with Parmesan cheese. Recover, let stand 20 minutes before serving.

Since microwave ovens vary in power, you may need to adjust your cooking time.
