SEASONED CHICKEN BREASTS 
4 skinless chicken breasts, boned
2 eggs, beaten
Seasoned bread crumbs
Olive oil
1 pt. heavy cream
1 c. grated Parmesan cheese
1 tsp. parsley flakes
Salt & pepper to taste
4 slices Mozzarella cheese

Preheat oven to 350 degrees. Dip chicken breasts in eggs and coat in bread crumbs. Brown in oil over low heat. Combine cream, Parmesan cheese, parsley flakes and salt and pepper and heat over medium heat. Place chicken in a 2-quart casserole. Cover with Mozzarella cheese and cream sauce. Bake for 30 to 40 minutes. Serve with pasta or rice.
