CORN PUDDING 
3 eggs, slightly beaten
1 (1 lb.) can creamed corn
1/2 tsp. salt
1/4 tsp. pepper
1 tbsp. sugar
1 c. milk
1/4 tsp. dry mustard (or wet)
2 tbsp. minced onion
1/2 c. green pepper, chopped (optional)
1/2 c. pimento, chopped
2 c. coarse cracker crumbs
2 tbsp. butter

Combine all ingredients, except butter. Pour into greased 2 1/2 quart casserole. Dot with butter. Bake in preheated oven 350 degrees for 45-60 minutes or until knife inserted into center comes out clean. Serves 4-6.
