SPICY SEAFOOD CORNBREAD MUFFINS 
1 med. onion, minced
1/2 c. butter
2 cloves garlic, minced
1 lb. crawfish tails or shrimp
Salt to taste
Cayenne pepper to taste
Garlic salt to taste
8 green onions, minced
1 (16 oz.) pkg. jalapeno cornbread mix

Saute onion in butter; add garlic, seafood and seasonings. Cook over low heat for 15 minutes. Add green onions; cook 5 minutes. Prepare cornbread according to package directions and combine with seafood mixture. Spoon into tiny greased muffin pans. Bake at 350 degrees for 10 minutes.
