PASTEL POUND CAKE | |
1 c. butter, softened 2 c. sugar 4 eggs 1 tsp. almond extract 1 tsp. vanilla extract 3 c. all-purpose flour 3/4 tsp. salt 1/2 tsp. baking powder 1/2 tsp. baking soda 1 c. buttermilk 1 c. pastel miniature marshmallows confectioners sugar In a large mixing bowl, cream butter and sugar. Add eggs 1 at a time, beating after each addition. Add extracts. Combine the flour, baking powder, salt and baking soda. Add to creamed mixture alternately with buttermilk, beating well after each addition. Pour half the batter into a greased and floured 10-inch tube pan. Sprinkle with marshmallows. Top with remaining batter. Bake at 350°F for 55 to 60 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pan. Cool completely. Dust with confectioners sugar. |
