FRUITY ZUCCHINI BREAD | |
3 eggs, beaten 2 c. sugar 3 c. flour 1 1/2 tsp. cinnamon 1 tsp. salt 1 c. raisins 1 (8 1/2 oz.) can crushed pineapple, drained 1 c. oil 2 tsp. vanilla 2 tsp. baking soda 1/2 tsp. baking powder 2 c. shredded zucchini 1 c. chopped nuts Mix eggs, sugar, oil, and vanilla. Add zucchini and pineapple. Add dry ingredients and the raisins and nuts. Pour into greased and floured loaf pans. Bake about 1 hour at 350 degrees or until center is no longer moist. Gives three foil pans. |
