SALMON WITH PINEAPPLE SALSA 
1 (16 oz.) can pineapple tidbits
1/4 c. diced red bell pepper
1/4 c. diced green bell pepper
1/4 c. diced red onion
1 tbsp. fresh lime juice
2 1/2 tsp. chopped jalapeno chili pepper
1/4 tsp. grated lime peel
2 lg. fillets of salmon, cut into portions
1 tsp. low sodium soy sauce

Combine salsa ingredients (first 7 ingredients), season with salt. (Can be prepared 6 hours ahead. Cover and refrigerate.) Preheat broiler. Brush salmon with soy sauce. Broil salmon until opaque in center, about 3 minutes each side. Serve with salsa as a garnish.
