PINEAPPLE CHICKEN SALAD 
1/2 c. mayonnaise or salad dressing
2 tsp. prepared mustard
2 c. chicken - cooked & shredded
1/2 c. celery, sliced
1 tbsp. onion, chopped fine
1/2 c. mushrooms, sliced
1/4 c. green pepper, chopped
1/4 c. ripe olives, sliced
1 (20 oz.) can pineapple tidbits
1 (11 oz.) can Mandarin orange sections

Drain fruit and refrigerate, mix mayonnaise and mustard. Stir in rest of ingredients. Cover and refrigerate. Just before serving add fruit. Serve on lettuce leaf.
