SALMON CAKES FLORENTINE | |
1/2 c. plain yogurt 2 tsp. minced onion 1 1/2 tsp. snipped fresh dill or 1/2 tsp. dill weed 1/8 tsp. dry mustard 1 (15 1/2 oz.) can salmon, drained, skin, and bones removed 1 (10 oz.) pkg. frozen, chopped spinach, thawed and drained 3/4 c. Quaker Oats (quick or old fashioned), uncooked 1/4 c. milk 1 egg white, slightly beaten 2 tbsp. minced onion 1 1/2 tsp. snipped fresh dill or 1/2 tsp. dill weed Combine first four ingredients; mix well. Chill. Combine remaining ingredients; mix well. Shape mixture into six oval patties; place on rack of broiler pan about 4 inches from heat. Broil about 3 minutes on each side or until light golden brown and heated through. Serve with sauce. 6 servings. Note: Or substitute two 6 1/2 or 7 ounce cans chunk light tuna in water (drained and flaked). |
