SALMON CAKES FLORENTINE 
1/2 c. plain yogurt
2 tsp. minced onion
1 1/2 tsp. snipped fresh dill
1/8 tsp. dry mustard
1 (15 1/2 oz.) can salmon, drained, skin and bone removed
1 (10 oz.) pkg. frozen spinach, thawed and drained
3/4 c. Quaker oats
1/4 c. milk
1 egg white, beaten
2 tbsp. onion, minced

Combine first 4 ingredients; mix well. Chill. Combine remaining ingredients; mix well. Shape mixture into 6 oval patties. Place on rack of broiler pan about 4 inches from heat. Broil about 3 minutes on each side or until golden brown and heated through. Serve with sauce.

Note: Two 6 1/2 or 7 oz. cans of chunk tuna may be substituted.
