ZUCCHINI FRUIT BREAD 
1 c. golden raisins
4 eggs
2 c. white sugar
1 c. salad oil
1 tsp. vanilla
1 1/2 tsp. apple pie spice
3 c. flour
1 tsp. baking soda
1 tsp. baking powder
1 (8 oz.) can crushed pineapple, drained
1 c. shredded coconut
1 c. chopped dates
1/4 c. chopped walnuts
1/4 c. chopped pecans
1/4 c. chopped almonds
2 c. shredded zucchini

Put raisins in a saucepan. Cover with water, bring to a boil; remove from heat, drain and set aside.

Put eggs and sugar in a bowl of electric mixer, begin beating. Add oil until mixture is light and fluffy.

Add vanilla, salt, apple spice, mix thoroughly. Add dry ingredients, mix well. Stir in raisins, pineapple, coconut, dates and nuts. Blend well. Pour into 3 medium-sized greased pans.
