BRUNCH DISH EGGS | |
4 oz. diced Canadian bacon 1/4 c. green onions 3 tsp. butter 12 eggs, beaten 3 oz. drained mushrooms 4 tsp. melted butter 2 1/4 c. soft bread crumbs 1/8 tsp. paprika CHEESE SAUCE: 2 tbsp. butter 2 tbsp. flour 1/2 tsp. salt 1/8 tsp. pepper 2 c. milk 4 oz. American cheese Cook bacon, and onions in butter. Add eggs and scramble until set. Fold mushrooms and eggs into cheese sauce. Spray 9 x 13 pan with Pam. Place mixture in pan. Combine butter, bread and paprika and sprinkle on top of eggs. Cover and chill for 1/2 hour. (I make night before.) Bake at 350 degrees for 30 minutes. |
