BACON QUICHE 
1 frozen pie shell
1 c. Mozzarella cheese, grated
8 to 10 slices bacon
3 eggs, beaten
1 c. milk
1/8 tsp. nutmeg
1 tbsp. onion, chopped
salt and pepper to taste

Prebake pie shell at 350°F for 10 minutes. Fry (or bake) bacon until crisp; crumble into small pieces to yield 3/4 cup. Combine eggs, milk, nutmeg, onion, salt and pepper. Beat well. Sprinkle prebaked pie shell with cheese and bacon; pour in egg mixture.

Bake at 350°F for 35 minutes or until knife inserted in center comes out clean.

Serves 6 to 8.
