SHRIMP STUFFED TOMATOES 
6 lg. tomatoes
3/4 lb. cooked peeled shrimp
1 tsp. salt
1 c. cooked rice
1 c. grated cheese, Cheddar
1 lg. egg, beaten
Dash of pepper
1 tbsp. butter, melted
1/4 c. dry bread crumbs

Wash tomatoes, remove stem ends and centers. Sprinkle shell with salt. Combine remaining ingredients except butter and crumbs. Stuff tomatoes with mixture.

Combine butter and bread crumbs, sprinkle over top. Bake 30-40 minutes, or until tomatoes are tender, at 350 degrees. Serves 6.
