HEARTY BEEF AND VEGETABLE SOUP 
1 1/2 lbs. beef short ribs, cut into 2" chunks
6 c. water
4 stalks celery, diced
2 carrots, diced
1 onion, diced
2 potatoes, diced
1 (10 oz.) pkg. frozen mixed vegetables
1 lb. can tomatoes
2 tbsp. chopped parsley
Salt & pepper to taste

Place all ingredients in a crock pot. Cover and cook on low for 8 to 10 hours or until meat is tender and vegetables are cooked.
