SWEET POTATO CASSEROLE 
8 med. sweet potatoes
1/4 lb. butter
1/2 c. sugar
1/4 tsp. cinnamon
1/4 tsp. nutmeg
1/2 c. milk
1/4 c. coconut
1/4 c. walnuts
1 lg. bag of marshmallows
1/4 c. raisins

Boil potatoes with skins on. When cooked, slip skins off. With an electric mixer, whip potatoes, butter, sugar, cinnamon, nutmeg, and enough milk to make potatoes smooth and creamy.

Add coconut, raisins, and walnuts. If desired, add more cinnamon and nutmeg. Pour into a baking dish. Cover entire top of casserole with marshmallows. Push marshmallows about 1/4 way down into top of potatoes. Bake at 350 degrees for 30 minutes or until marshmallows are slightly browned.
