CREME DE MENTHE CHEESE CAKE | |
CRUST: 3/4 box chocolate wafer cookies, crushed 1/4 c. butter Or use a ready made chocolate graham cracker crust. CAKE: 2 lbs. cream cheese, room temperature 1 1/2 c. sugar 4 eggs 3 tbsp. creme de menthe liqueur 1/4 tsp. peppermint extract 1/4 tsp. salt 1 c. chocolate chips Combine butter and cookies or use ready made crust and line bottom of buttered 9" springform pan. (Homemade crust is richer.) Cream cheese and sugar. Add eggs, one at a time. Add remaining ingredients, except chocolate chips, mixing well. Pour into pan. Sprinkle chocolate chips on top and push with cake mixture with handle of a spoon. Bake at 300 degrees for approximately 45 minutes. Cake may split on top. Turn oven off and leave cake in oven 1 hour. Refrigerate overnight. Serve with fresh strawberries in powdered sugar or alone. |
