COCONUT FRUIT CAKE | |
2 sticks butter, melted 2 c. sugar 4 egg yolks 3 c. flour (self-rising) 1 c. milk 4 egg whites, stiffly beaten 7 oz. can coconut 2 c. white raisins 2 c. pecans 1/2 lb. glaze cherries, chopped 1/2 lb. glaze pineapple, chopped Cream butter and sugar. Add egg yolks, one at a time; mix well. Add flour and milk; mix well. Add egg whites, coconut, raisins, pecans, cherries and pineapple; mix well. Bake in 300 degree oven for 1 hour and 20 minutes until golden brown. Cool and store for about 6 weeks. |
