SPRING CHEDDAR CHICKEN 
2 c. cooked chicken, cut into sm. chunks
1 c. Minute rice, cooked
1 can Cheddar cheese soup
1 c. milk (or 1/2 c. evaporated milk diluted)
2 tbsp. instant minced onion
1/2 pkg. frozen peas

Butter bottom and sides of deep casserole. Layer rice on bottom; then frozen peas, next chicken chunks. Pour combination of minced onion, Cheddar cheese soup and milk over above evenly.

TOPPING:

Crumbled Cheddar cheese crackers with 2 tablespoons butter.

Place crumbled cheese cracker mixture on top (the butter may be omitted). Bake in 350 degree oven approximately 45 minutes.
