SWEET POTATO CASSEROLE | |
1/2 c. packed brown sugar 1/2 c. orange juice 1/3 c. melted butter 2 (1 lb., 2 oz.) cans sweet potatoes 2 eggs 1 tsp. salt 1 tsp. cinnamon 1/4 tsp. ground cloves 2/3 c. pecan halves Make a syrup by combining 1/4 cup sugar, 2 tablespoons orange juice and 2 tablespoons butter. Set aside. Mash both cans of sweet potatoes. Whip in eggs. Add remaining sugar, orange juice and butter. Add spices. Mix well. Spread into a casserole dish. Top with 2/3 cup pecan halves. Pour syrup over pecans. Bake 40 minutes at 375 degrees. Serves 6 to 8. |
