SPINACH LASAGNE 
Oven at 350 degrees.

2 med. onions, chopped
2 cloves garlic, chopped

Saute onion and garlic in a little olive oil. Put half of the onion and garlic mixture in a bowl for the filling. Leave the remaining half in the pan for the sauce.

NOODLES:

Cook one small package of lasagne noodles according to package directions.

SAUCE:

2 cans tomato sauce
1 teaspoon basil
1/2 tsp. oregano leaves
1 tsp. parsley
pepper

Add these ingredients to half the onion and garlic mixture and simmer 15 minutes.

FILLING:

1 container Ricotta cheese
1 pkg. frozen chopped spinach
1 tbsp. parsley flakes
Pepper

Mix together these ingredients with the other half of the onion and garlic mixture you put in the bowl.

Shred 1 pound of Mozzarella cheese. Layer in the following order in 9 x 13 inch pan: noodles - Ricotta mixture - Mozzarella - Sauce.

No matter what you end up with, you must have sauce as the last layer. Cover with foil and bake for 45 minutes. Remove foil and bake another 15 minutes.
