CHOCOLATE SURPRISE CAKE 
2 1/4 c. plain flour
1 tsp. baking soda
1 tsp. baking powder
1 1/2 c. sugar
2/3 c. shortening
3 eggs
1/4 tsp. salt
1/2 c. cocoa
1 c. water
1 1/4 tsp. vanilla
1/2 c. sauerkraut, chopped, rinsed & drained

Cream sugar and shortening. Add eggs. Mix well. Add vanilla, salt and cocoa. Add sifted flour, baking soda, baking powder and water. Mix well. Fold in sauerkraut by hand. Pour into 2 (9 inch) greased and floured pans or sheet cake pan. Bake at 375 degrees for 35-45 minutes. Frost with cream cheese frosting.
