OATMEAL CAKE | |
1/2 c. butter 1 c. rolled oats 1 1/3 c. boiling water 2 eggs, well beaten 1 c. white sugar 1 c. brown sugar 1 tsp. vanilla extract 1 1/2 c. flour 1 tsp. baking powder 1 tsp. salt 1 tsp. baking soda 1 tsp. cinnamon Combine butter, oats and water. Let stand 20 minutes. Combine eggs, sugars, vanilla and stir into oat mixture. Mix dry ingredients and stir into oat-sugar mixture. Pour into greased 9 x 13 inch pan and bake for 40-50 minutes at 350 degrees. While still hot, spread topping over cake and broil 2-3 minutes until bubbling. Cool. Cut into squares. TOPPING: 1 c. brown sugar 1/2 c. evaporated milk 2 tbsp. butter 1/2 c. nuts, chopped 1/2 c. coconut 1/2 tsp. vanilla extract |
